Chocolate Porter Berry Cobbler
- Topping:
- 1 1/2 cup flour
- 1/2 cup quick oats
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 1/2 tsp salt
- 1 cup chilled butter
- Filling:
- 32 ounces of frozen berries (blueberry, blackberry, raspberry) - drain some of the liquid when thawed
- 14 oz dark chocolate
- 1 1/2 cup porter or stout (we used Trader Joe's Chocolate Stout)
- 3/8 tsp xanthan gum
- Pinch Salt
- Add the flour, oats, both sugars, and salt to a food processor, pulse to combine
- Add the butter, process until combined
- Place in freezer until the filling is ready
- Put the beer in a blender and slowly add in the xanthan gum while blender is on low-medium speed
- In a double broiler over medium/low heat, slowly add in the chocolate and beer until chocolate is fully incorporated. Remove from heat
- Stir in the berries
- Place 8 oven safe bowls (or one medium-large dish) on a baking sheet.
- Add the filling to the bowls, about 2/3 full
- Add the topping until almost level with the top of the bowls
- Bake at 350 until golden brown, about 45-50 minutes
- *Make sure to place something under the bowls as they tend to boil over a little bit in the oven
- Let cool for 10-15 minutes and serve with vanilla ice cream
