Chocolate Porter Berry Cobbler

  1. Add the flour, oats, both sugars, and salt to a food processor, pulse to combine
  2. Add the butter, process until combined
  3. Place in freezer until the filling is ready
  4. Put the beer in a blender and slowly add in the xanthan gum while blender is on low-medium speed
  5. In a double broiler over medium/low heat, slowly add in the chocolate and beer until chocolate is fully incorporated. Remove from heat
  6. Stir in the berries
  7. Place 8 oven safe bowls (or one medium-large dish) on a baking sheet.
  8. Add the filling to the bowls, about 2/3 full
  9. Add the topping until almost level with the top of the bowls
  10. Bake at 350 until golden brown, about 45-50 minutes
  11. *Make sure to place something under the bowls as they tend to boil over a little bit in the oven
  12. Let cool for 10-15 minutes and serve with vanilla ice cream
