Choose-Your-Veggies Vegetables

  1. Pour 1-2 tablespoons tomato liquid from the canned tomatoes into a large saucepan. Add onion and steam/saute, covered on low heat until soft, about 5-10 minutes. Stir in the garlic and curry powder (or variation). Cook 1 minute. Add the chopped green vegetables and diced tomatoes with rest of tomato liquid. Simmer partially covered until all veggies are tender. (10 minutes:green beans,broccoli,Swiss chard,kale,bok choy,zucchini; 20 minutes:okra,Brussels sprouts,collards.) Add a tbsp. of water if needed to prevent sticking. Add black pepper and cilantro and serve. Makes about 4 cups, about 89 calories per 1 cup serving. VARIATIONS: Instead of curry powder, use 1 tablespoon salt-free Italian seasoning mix plus a pinch of crushed red pepper flakes. Or for Mexican flavor, substitute 1/2 tbsp. chili powder and a dash of cayenne pepper. Can also add cooked or canned beans for a great dinner!
