Old Fashioned Stack Cake
- 3/4 c. brown sugar
- 3/4 c. shortening
- 2 eggs
- 3/4 c. sorghum molasses
- 3 1/2 c. flour
- 1 tsp. salt
- 1 tsp. cinnamon
- 1 tsp. cloves
- 1 tsp. ginger
- 1 tsp. nutmeg
- 3/4 c. buttermilk
- 2 tsp. baking soda
- 1 qt. cooked dried apples or applesauce
- Cream together sugar and shortening.
- Add eggs and beat well. Stir in molasses.
- Sift flour with spices.
- Add to creamed mixture alternately with buttermilk into which baking soda has been stirred.
- Use 2 cast-iron skillets for baking which have been greased and sprinkled lightly with flour.
- Warm skillets.
- Dip 2 heaping tablespoonfuls of dough which should be rather stiff, into center of each skillet.
- Wet hand in ice cold water and pat dough toward sides of skillet.
- Make a very thin layer.
- Bake at 375u0b0.
