Tuna Salad Toasted Sandwiches

  1. Butter one side of each slice of wholewheat bread; lay down inside-out with unbuttered faces towards you.
  2. In a bowl mix tuna & tuna oil, spice, onion, mushroom, chopped egg, garlic, tomato, herbs, and seasoning.
  3. Microwave bowl on high for about 2 minutes, stirring now and then.
  4. In a medium-hot frying pan lay 3 slices of bread, butter-side down.
  5. Place half the green leaves on bread, then the cheese, then the warm herby flavourful tuna/egg/mushroom/tomato mix
  6. Finish with remaining leaves and top with bread, butter-side up.
  7. When the underside is golden and crispy, turn sandwiches and cook until the other side is golden and the cheese is partly melted.
  8. Cut into halves and enjoy.
