Dandy Candy Cake
- 1 1/2 c. sifted all-purpose flour
- 3/4 c. sugar
- 2 tsp. double acting baking powder
- 1/2 tsp. salt
- 1/3 c. shortening
- 1/2 c. milk
- 1 tsp. vanilla
- 2 unbeaten egg whites
- 1/4 c. all-purpose flour
- 1/3 c. firmly packed brown sugar
- 1/4 c. butter
- 1/2 c. flaked or chopped coconut
- 1 1/2 tsp. lemon juice
- Preheat oven to 350u0b0. Sift flour, sugar, baking powder and salt together in mixing bowl. Add shortening, milk and vanilla. Beat 1 1/2 minutes on low speed. Add egg whites and beat 1 1/2 minutes.
- Pour into a 9x9x2 inch pan, well greased and lightly floured on the bottom. Prepare the Dandy topping. Combine 1/4 c. flour and brown sugar. Cut in 1/4 c. butter until mixture resembles coarse crumbs. Stir in 1/2 c. flaked coconut and 1 1/2 tsp. lemon juice.
- Sprinkle Dandy topping over batter and bake at 350u0b0 for 30 to 35 minutes.
