Pasta & Vegetables

  1. Prepare each vegetable over a medium heat in a large saute pan using a touch of olive oil and garlic. Turn to brown each side then reduce heat to lowest setting and allow the vegetable to steam in its own juice until the desired tenderness is achieved. Reserve vegetables in a bowl.
  2. Prepare pasta by boiling in a large pot with salted water. Drain and combine with reserved vegetables.
  3. Mix in cheese and basil and any left over olive oil. Season to taste.
