Baked Salmon Patties
- 300 grams salmon fillet
- 1 tbs. olive oil
- 2 potatoes,cubed
- 1 small onion, chopped
- 1 clove garlic, crushed
- 2 tsp. mustard
- 2 tbs.lemon juice
- 2 tbs.parsley,chopped
- salt, pepper
- 1 egg
- 1/4-1/2 cup bread crumbs
- coating:
- 1/4 cup wheat germ
- 1/4 cup sesame seeds
- Bake salmom 12-15 minutes
- Cook potatoes in salted water, drain and cool.
- Saute onions in olive oil till translucent, add garlic.
- Mash potatoes, add onions, flaked salmon and rest of ingredients. Taste and correct seasoning. Moisten hands and form small balls.Mix coating ingredients.
- Roll salmon balls in coating.
- Place on baking sheet lined with paper. Flatten balls. Bake 5-10 minutes on each side at 180 dgrees C.
- Serve with goat's milk yogurt or sour cream
