Chinese Stir-Fried Long Beans W/ Sechuan Sauce
- 1 lb Chinese long beans
- 2 t dark soy sauce
- 2 t finely chopped garlic
- 1 t sugar
- 1 t sesame oil
- 2 t chili paste (less than 1/4 Yank Sings)
- 3 T vegetable oil
- 1/4 cup chicken broth
- 2 T toasted sesame seeds
- 1/2 lb ground pork
- Sauce for pork
- 4-5 T soy sauce
- 3 T dry sherry
- 3 T Chinese Five Spice
- Mix soy sauce, dry sherry and Chinese Five Spice. Add pork and let sit for 30 minutes or so.
- Add oil to wok and cook meat until brown. Remove and set aside.
- Cut green beans diagonally into 2-3" lengths. Mix together soy sauce, garlic, sugar, sesame oil and chili paste. Heat wok or large heavy skillet until very hot. Add vegetable oil and tilt wok to coast side. Add long beans and stir-fry for 1 minute. Add broth and cover for 5 minutes. Add soy sauce mixture. Stir-fry until green beans are coasted and moisture is evaporated. Stir in sesame seeds.
