Bacon Jalapeño Beef Balls
- .600 kg pack of lean ground beef
- 1/3 of a sweet onion finely chopped
- 1 Jalapeno pepper/seeded
- a touch of salt and fresh ground pepper
- 1 egg
- 1/3 cup bread crumbs
- 1 pack of bacon
- 125g/half block cream cheese
- Toothpicks or wooden kabobs.
- 1. De-seed pepper and chop very fine. (Use half a pepper if you prefer mild balls). Chop onion very fine.
- 2. In large bowl, mix all ingredients except the bacon. Blend well with hands. Make balls from the mix, a size about one inch in diameter/bite size. (If you are working with a friend, have your friend make the balls while you prepare the balls).
- 3. Turn on oven to 415 degrees if you are serving balls immediately.
- 4. Remove bacon from pack and place on cutting board, cut in half. I ended up removing 1/3 of each strip lengthways because it was all fat and was too big for the balls. Cut bacon to preference to fit your balls, but balls should exceed mouth popping size.
- 5. Wrap the balls with the bacon and poke the toothpicks through them to hold the bacon in place.
- 6. Balls are ready to be cooked, at 15 mins on each side. Check to see cooking is not burning bacon, enjoy!
- 7. Freeze remaining balls, separated by parchment paper.
