Black Bean Brownies
- . 1 - 19 oz (540 ml) can of black beans, rinsed and well drained, you should end up with about 12 oz of drained beans
- . 1/2 cup chocolate chips, divided
- . 1/2 cup cocoa powder
- . 1 1/4 cup golden brown sugar (packed)
- . 1/4 tsp salt
- . 3 large eggs
- . 3 Tbsp grape seed oil
- . 1 tsp vanilla extract
- . 1/2 cup of chopped walnuts or pecans (optional)
- Heat your oven to 350 F. Line a 9 inch square baking pan with parchment paper and spay with cooking spray.
- In a large measuring cup, combine the eggs, oil and vanilla, and whisk until smooth.
- Put 1/4 cup of the chocolate chips in the food processor and pulse until well chopped. Add the drained black beans to the processor along with the cocoa powder, golden brown sugar and the salt. Pulse until beans are chopped. Then, with the machine running gradually pour in the egg mixture. Run the processor until all ingredients are very smooth. Stop the machine once or twice and scrap the sides back into the middle to ensure an even texture. Stir in nuts if using, but do not process.
- Turn the batter into the prepared baking pan, and top with the remaining 1/4 cup of chocolate chips.
- Bake at 350 for 25 minutes. Cool on a rack before cutting.
