Savory Chicken Caps
- 1 container mushroom caps (button or baby 'bellas) cleaned
- 1 can cooked white chicken breast, drained
- 1 small scallion, sliced
- 1/2 brick cream cheese, softened
- 1 cup shredded sharp cheddar cheese
- 1/2 cup breadcrumbs
- 1/2 tspn garlic powder
- 2TBspn worsteshire sauce
- dash pepper & dried parsley for garnish
- spray oil/cooking spray
- Trim stems of mushrooms, remove
- Place caps (tops down) on lightly oiled cookie sheet. Broil for about 5-10 minutes, until they just start to darken.
- Meanwhile...
- Combine chicken and sliced mushroom stems with softened cream cheese until smooth.
- Add garlic powder and worsteshire.
- Fold in scallion and shredded cheese. Mixture should be chunky and thick.
- Spoon generous amount of mixture into caps. Sprinkle with breadcrumbs. Spritz with oil/cooking spray, and top with dash of pepper & parsley.
- Broil for another 10-15 minutes until golden and bubbly. Serve.
