Coleslaw
- Coleslaw:
- 1 Medium head cabbage, cored and sliced or shredded finely
- 1 Tablespoon grated sweet onion (optional)
- 1 Freash carrot, grated
- 1 cup homemade texas mayonnaise
- 1/4 cup white vinegar
- 1 tablespoon suger
- salt and pepper, for taste
- Homemade texas mayonnaise:
- 1 Egg
- 1 teaspoon Dijon mustard or 1/2 teaspoon dry mustard
- 3 tablespoons fresh lemon juice or vinegar
- Fresh parsley, basil, oregano leaves (optional)
- 1/2 teaspoon salt
- 1/2 teaspoon ground red pepper
- 1/2 cup corn oil
- 1/2 cup oilve oil
- Coleslaw:
- stir all ingredients together and serve as soon as possible, while the cabbage is still crisp severs 6-8
- Homemade texas mayonnaise:
- In a blender or food processor, place the egg, mustard, lemon juice, herbs, if desired, salt and pepper. Blend for 1 minute. With blend or processor running, slowly add oils untill mayonnaise is thick. Taste and add a little more salt or pepper, if you wish. You may wish to add more lemon juice, if you prefer a sharper flavor and thinner consistency. Makes approximately 1 1/3 cups.
