Chicken Fiesta

  1. Season chicken with salt, pepper and paprika.
  2. Brown in melted butter in a large skillet over medium heat.
  3. Drain chicken on paper towels; set aside.
  4. Cook sausage, celery and onions in same skillet over medium-high heat until vegetables are tender, stirring frequently.
  5. Add rice, corn and lemon juice; mix well.
  6. Pour into buttered shallow baking dish.
  7. Arrange chicken on top of rice mixture, pushing slightly into rice mixture.
  8. Cover with foil. Bake at 350u0b0 for 30 to 40 minutes or until chicken is tender. Makes 6 servings.
