Chicken Fiesta
- 2 1/2 to 3 lb. chicken pieces
- salt
- pepper
- paprika
- 2 Tbsp. butter
- 1/4 lb. pork sausage
- 3/4 c. sliced celery
- 3/4 c. sliced green onions and tops
- 3 c. cooked rice
- 1 (12 oz.) can whole kernel corn with peppers
- 2 tsp. lemon juice
- Season chicken with salt, pepper and paprika.
- Brown in melted butter in a large skillet over medium heat.
- Drain chicken on paper towels; set aside.
- Cook sausage, celery and onions in same skillet over medium-high heat until vegetables are tender, stirring frequently.
- Add rice, corn and lemon juice; mix well.
- Pour into buttered shallow baking dish.
- Arrange chicken on top of rice mixture, pushing slightly into rice mixture.
- Cover with foil. Bake at 350u0b0 for 30 to 40 minutes or until chicken is tender. Makes 6 servings.
