Baked Beans
- 2 packages bacon - cut into 1" pieces - those are 12 oz pckgs - when did bacon stop coming in 1 lb?
- 5 cloves garlic - minced fine
- 2 onions - chopped
- 2 jalapenos - fine minced
- 16 oz BBQ sauce - I use Sweet Baby Ray's
- 1 cup apple cider vinegar
- 1cup brown sugar
- Black pepper
- 5 cans beans - I used 4-28oz Van Camp's and 1-30 Sun Vista Black Beans
- I use a Dutch Oven for this.
- Cook bacon down one pack at a time until crisp. Drain grease as needed. Set crisp bacon aside.
- In bacon grease sweat (do not brown) onion, garlic and jalapeno until soft
- Add apple cider vinegar, brown sugar, bacon, black pepper and bbq sauce
- Let slow simmer for 10 mins
- While this is simmering put all the beans in a crock pot .
- Transfer sauce to crock pot and set to high for 1 hour. After that you can hold on warm for as long as needed.
