Belfast Brownies
- 100g Melted Butter
- 225g Golden Caster Sugar
- 40g Cocoa Powder
- 2 Eggs
- 1 tsp Vanilla Essence
- 50g Self Raising Flower
- 50g Chocolate Chips
- Carefully melt the Butter over a gentle heat & transfer to a Bowl.
- Mix the Cocoa Powder into the Butter & put to One Side. Then, Whisk the Eggs & Stir in the Caster Sugar, mixing until smooth.
- Pour the Cocoa Powder and Butter Mixture into the Eggs and Caster Sugar and Stir. Add the Vanilla Essence & Stir again.
- Slowly add the Self Raising Flour, stirring constantly & keep going until it is thoroughly mixed with no lumps. Finally add the Chocolate Chips & Stir.
- Transfer the mixture to a Well Greased Cake Tin (or line one with Greaseproof Paper).
- Pop into the Oven Pre-heated to 180 Degrees Celsius or Gas Mark 4.
- They will take roughly 30 minutes to cook. (The Perfect Brownie should be Crisp on the Outside & Gooey in the middle).
- Remove from the oven & leave in the tin for about 10 minutes before cutting into Squares & Transferring to a Cooling Rack.
