Kabsa-Chicken

  1. heat oil in a large pot over medium heat and fry onion till slightly browned
  2. add cloves, cinnamon, cardamom, pepper and cumin, saute for 1 minute
  3. add chicken, 1 tsp salt, garlic, ginger, tomato, yogurt, cayenne pepper, and lemon juice.
  4. Cook for 10 minutes or until chicken is cooked
  5. Add enough water to liberally cover all ingredients in the pan
  6. Add rice, potatoes, coriander and remaining salt. Gently mix together
  7. Partially cover pan with lid and cook over medium heat for 15 minutes
  8. Remove from stove when water has evaporated and put covered pot in pre-heated oven at 150C (300F) for 15 minutes
