Kabsa-Chicken
- 1 Whole Chicken
- 1/3 cup oil
- 1 large onion
- 4 cloves
- 4 cinnamon
- 4 cardamom pods
- 6 black pepper corns
- 2 tsp cumin seed
- 2 tsp salt
- 1 tsp garlic
- 2 tsp ginger
- 2 tomato (diced tomato canes)
- 2 tsp tomato paste
- 1/2 cup yogurt
- 1/2 tbsp Cayenne hot pepper
- 3 tsp lemon juice
- 2 dried lime
- 2 cups Basmati Rice
- 6 small potatoes
- 1 tbsp coriander leaves
- heat oil in a large pot over medium heat and fry onion till slightly browned
- add cloves, cinnamon, cardamom, pepper and cumin, saute for 1 minute
- add chicken, 1 tsp salt, garlic, ginger, tomato, yogurt, cayenne pepper, and lemon juice.
- Cook for 10 minutes or until chicken is cooked
- Add enough water to liberally cover all ingredients in the pan
- Add rice, potatoes, coriander and remaining salt. Gently mix together
- Partially cover pan with lid and cook over medium heat for 15 minutes
- Remove from stove when water has evaporated and put covered pot in pre-heated oven at 150C (300F) for 15 minutes
