Dave'S Seafood Saute
- White Long grain rice
- 2 TBSP olive oil
- 2 cloves of garlic, minced
- 1/4 cup onion or shallots, diced
- 2 TBSP butter
- 1/4 cup sherry
- 1/4 cup celery, diced
- 1/2 cup tomato,skinned and diced
- 1/2 cup zucchini, diced
- 1/4 cup green pepper, diced
- 1 tsp dried parsley
- 1 tsp dried basil
- 1 lb shrimp, cleaned and deveined
- 1 lb bay scallops, rinsed
- 1/2 cup crabmeat
- Prepare white rice according to package directions.
- In 12" fry pan, heat olive oil.
- Saute garlic, onions, celery until soft, about 3 minutes.
- Add butter and melt.
- Add parsley and basil.
- Add tomatoes, zucchine, green pepper and saute 1 minute. Add shrimp, scallops, and crabmeat. Pour wine over seafood. Stir thoroughly. Saute 2 - 3 minutes, turn shrimp and saute 2 - 3 more minutes. Plate rice and ladle seafood mix over it.
