Sauteed Chicken Strips
- 1 1/2 lb. skinless chicken
- 2 Tbsp. flour
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 2 Tbsp. butter
- 2 Tbsp. oil
- 2 c. green grapes
- 1/2 c. chicken broth
- 1/2 c. heavy cream
- 2 Tbsp. white wine
- 2 Tbsp. parsley
- Cut the chicken breasts crosswise into 1/2 inch wide strips. In a small bowl, combine the flour, salt and pepper.
- Toss the chicken strips in the seasoned flour to coat lightly.
- Set the chicken aside.
- In a large skillet, melt butter in the oil over medium heat until hot.
- Add chicken pieces and stir-fry until the chicken just begins to brown, 3 to 4 minutes.
- Add the grapes, chicken broth, cream and wine.
- Let mixture come to a boil. Reduce heat to medium.
- Cover and simmer, stirring often, until chicken is cooked through and the grapes are slightly softened, 3 to 4 minutes.
