Good Luck Lentil + Ham Soup
- 1 ham bone
- 1 small yellow onion finely chopped
- 3 carrots and 1 parsnip peeled and sliced in to coins
- 8-16 brussel sprouts
- 1 stalk of celery chopped
- 2 sprigs of fresh rosemary and 1 large fresh bay leave
- 1 cup of turkey, chicken or vegetable broth and 6-8 cups of water.
- 1/1/4 cup of brown or green lentils, 1/4 cup of split black lentils, 1/4 cup of split green lentils and 1/2 cup of red lentils.
- Olive oil for the pan
- Put the oil in a large dutch oven or soup pot. On medium heat add the chopped onion and saute until lightly golden add the bone, celery, carrots and parsnips, stock, water and fresh herbs. Bring to a boil and then turn down to medium until meat begins to fall from the bone. Add the lentils and brussel sprouts and cook for 45 minutes more until lentils are tender. Pull the meat from the bone and discard bone add the meat back into the pot. Salt and pepper.
