Good Luck Lentil + Ham Soup

  1. Put the oil in a large dutch oven or soup pot. On medium heat add the chopped onion and saute until lightly golden add the bone, celery, carrots and parsnips, stock, water and fresh herbs. Bring to a boil and then turn down to medium until meat begins to fall from the bone. Add the lentils and brussel sprouts and cook for 45 minutes more until lentils are tender. Pull the meat from the bone and discard bone add the meat back into the pot. Salt and pepper.
