Carrot-Pineapple Delight

  1. Sift together into a mixing bowl sifted all-purpose flour, sugar, baking powder, baking soda, ground cinnamon and salt.
  2. Add oil, egg, finely shredded carrots, crushed pineapple with juice and vanilla.
  3. Mix until moistened; beat 2 minutes at medium speed on electric mixer.
  4. Spray an 8 x 8 x 2-inch baking pan with nonstick spray coating.
  5. Pour batter evenly into pan.
  6. Bake in a 350u0b0 oven for 20 to 25 minutes or until a toothpick inserted near the center of the cake comes out clean.
  7. Cool on wire rack.
  8. Frost with Light Cream Cheese Topping.
  9. Yields 9 (2-ounce) servings.
