Spanish Pasta
- Scallops and or Shrimp
- Dab of Butter
- 3 Tbls.Oil
- 1 Med.Onion Chopped
- 1 Clove Garlic minced
- 1 1/2 C. Orzo Pasta
- 1 Can Rotel Tomatoes & Green Chiles
- 1 Box(32Oz.) Fat Free Chicken Broth
- 1 Sm. can Tomato Juice
- Pinch of Cumin Powder
- Can also Add Canned Jalapeno's To Taste if you Want to Heat it up a Few notches
- Add Butter and 1 Tbls. of Oil to pan. When Hot sear Scallops and or Shrimp Till Browned. Set aside.
- Heat 2 Tbls. Oil in Large frying pan.
- Add Onions saute till soft.
- Add Garlic, saute for apx. 1 Min. Longer.
- Add Orzo Pasta to Onions and Garlic. Saute Till Pasta starts to turn Golden.
- Add Rotel Tomatoes and Green Chiles. Stir and gradually add 1 C.Chicken Broth.
- Turn heat down to a low simmer.
- Add a small pinch of Cumin Powder to your taste, Cover
- Stir often
- Add 1/2 C. Chicken Broth when Liquid is absorbed.
- Add Small amount of Tomato Juice as it simmers to enhance the tomato flavor.
- Keep adding Chicken Broth as the liquid is aborbed.
- Simmer till Pasta is soft.
- The consistancy Should be Moist, semi-dry not liquidy.
- Cut Shell Fish to Desired Pieces Add to pasta right before serving.
