Spanish Pasta

  1. Add Butter and 1 Tbls. of Oil to pan. When Hot sear Scallops and or Shrimp Till Browned. Set aside.
  2. Heat 2 Tbls. Oil in Large frying pan.
  3. Add Onions saute till soft.
  4. Add Garlic, saute for apx. 1 Min. Longer.
  5. Add Orzo Pasta to Onions and Garlic. Saute Till Pasta starts to turn Golden.
  6. Add Rotel Tomatoes and Green Chiles. Stir and gradually add 1 C.Chicken Broth.
  7. Turn heat down to a low simmer.
  8. Add a small pinch of Cumin Powder to your taste, Cover
  9. Stir often
  10. Add 1/2 C. Chicken Broth when Liquid is absorbed.
  11. Add Small amount of Tomato Juice as it simmers to enhance the tomato flavor.
  12. Keep adding Chicken Broth as the liquid is aborbed.
  13. Simmer till Pasta is soft.
  14. The consistancy Should be Moist, semi-dry not liquidy.
  15. Cut Shell Fish to Desired Pieces Add to pasta right before serving.
