Torta Di Mele (Rosh Hashona)
- 4 large cooking apples
- 1.5 cups sugar
- 1 tsp cinnamon
- 1tbs rum
- 1/2 c veggie oil
- 1 tbs honey
- 3 eggs
- 1 c orange juice
- 1 tspp vanilla
- 3 c flour
- 2 tsp baking powder
- Cut apples into thin slices, put in a bowl with 2tbs sugar, cinnamon and rum. Mix well and set aside.
- Cream oil, sugar and honey. Add eggs one at a time, beating with each one.
- Mix together orange juice and vanilla. Alternately add the liquids and flour/bp.
- Put 1/3 of mixutre in springform pan, spread 1/2 of the apples, andother 1/3 of the mixture and the other 1/2 apples, topping with 1/3 of the batter.
- Bake at 350 degrees for 1.5 hours. Serve at room temp.
