Tuscan Cheese Plate
- 1 pound fresh Pecorino Tuscano
- 1 pound Pecorino Rossellino (from Pienza)
- 1 pound Pecorino Stravecchio (wrapped in walnut leaves)
- 2 ripe pears
- 2 granny smith apples
- juice of 1 lemon
- rosemary honey
- chestnut honey
- 1 loaf Tuscan country bread, sliced and warmed
- Arrange the Pecorino Toscano, Rossellino, and Stravecchio on a nonreactive tray.
- Rinse and slice the pears and apples, leaving the skin on, and rub them with lemon juice to keep them from discoloring. Pat them dry with a towel and place on the tray.
- Serve with the honey alongside, encouraging your guests to enjoy the rosemary honey with the fresh Pecorino Toscano and Rossellino and the chestnut honey with the Stravecchio. Serve the bread alongside.

- Serve this with a full-bodied red like Dolcetto.
