Chicken Or Beef Soup(Brodo Di Pollo)

  1. Rinse chicken thoroughly
  2. with
  3. salt.
  4. Place
  5. in
  6. large saucepan with water.
  7. Should
  8. cover
  9. chicken by 3-inches.
  10. Add onion and bring to boil.
  11. Skim
  12. surface of soup with spoon and discard.
  13. After no more foam
  14. appears,
  15. add
  16. the
  17. rest
  18. of the ingredients.
  19. Lower to a medium boil and simmer for 2 hours or until chicken is tender
  20. to
  21. fork.
  22. Remove
  23. chicken and strain broth.
  24. You may debone and cut
  25. up
  26. chicken to add to broth or set aside for chicken salad.
  27. Makes
  28. 8 to 10 servings.
  29. Variation: This broth can be
  30. used
  31. over rice, noodles and various other shapes of pasta.
