Corn Chowder With Chicken
- 1 lb pork belly, Diced
- 2 lbs chicken breasts, Cubed
- 2 cups yellow onions, Diced
- 2 cups red potatoes, Diced
- 2 cups celery, Chopped
- 2 cups carrots, Chopped
- 3 cups frozen corn
- 1 (10 3/4 ounce) can condensed cream of celery soup
- 1 (10 3/4 ounce) can condensed cream of mushroom soup
- 2 (14 1/2 ounce) cans chicken broth
- 1 cup half-and-half
- Set skillet to Medium-High.
- Add Pork Belly to skillet.
- Cook until browned.
- Remove Pork Belly, set aside.
- Set slow-cooker to High.
- Add Chicken to skillet with pork drippings.
- Cook until browned.
- Remove Chicken, add to slow-cooker.
- Add Onion and Celery to skillet.
- Cook until tender.
- Add Chicken Broth and Soups to skillet with Onion and Celery.
- Cook through, add to slow-cooker.
- Add Carrots, Potatoes, Corn, Thyme to slow-cooker.
- Stir together.
- Cook in show-cooker on High 2-3 hours.
- Add Half and Half 10-15 minutes before serving.
- Use Pork Belly as Garnish.
