2Good 2Be Easy Crawfish Gumbo
- 2 cloves garlic finely chopped
- 2 tbsp. Olive Oil
- 1/2 c. each:
- chopped Onion
- Bell Pepper
- Celery
- 2 lbs. Frozen crawfish w/juice
- 1 can each:
- 98% Fat-Free Cream of Mushroom
- 98% Fat-Free Cream of Chicken
- 2 can's each:
- Cream of Shrimp
- Tony's Ettouffe Sauce
- (Sometimes hard to find, but
- most Krogers stores have it
- in stock)
- 8 oz. Bertoli Light Alfredo
- To Taste:
- Tony's Original Seasoning
- Salt
- Pepper
- Heat oil and garlic until fragrant. Add chopped onions, bell pepper and celery and saute 3-5 minutes until tender. Add soups, sauces and thawed crawfish (w/juice) and cook on medium to low heat for 15 minutes. Season to taste and serve.
- *Best served with rice.
- *In the off-season you can use only 1lb of crawfish and add 1 diced sausage link and 1 diced chicken breast.
- *Leftovers may be frozen for later enjoyment!
