Sausage And Rice
- 1 Package chicken/apple sausage cut into bite sized pieces.
- 1 Onion, chopped
- 1 Red or green pepper, chopped
- 1 Garlic clove, minced
- 1 Cup long grain rice
- 1 TSP thyme
- 1/2 TSP oregano
- 1 14 oz can tomatoes, drained. Reserve juice
- Salt and peppe to taste
- Enough water when combined with tomato juice to make 1 3/4 cups.
- 2 TBS olive oil
- Saute onion, pepper, garlic and sausage in oil until onion is translucent. Add ricew and saute untill rice starts to turn brown. Add liquid, spices and tomato.Bring to boil, reduce heat and simmer until liquid is absorbed; 30-35 minutes. Serve with chopped green onion, and parsley or cilantro. Other sausage may be used depending on your taste or the occation.
