Energy Bars
- 1/2 C steel cut oats, uncooked
- 1/2 C millet, uncooked
- 1/2 C quinoa, uncooked
- 2 bananas, peeled and sliced (or substitute fruit)
- 1/2 C agave nectar
- 2 T cocoa powder
- 1/2 t vanilla extract
- 1 t cinnamon powder
- 2 T finely ground coffee (can omit)
- 1 t salt
- 4 C water
- 2 T coconut oil
- 1. Add everything but coconut oil in saucepan, stir to combine. Bring to simmer and cover for 20-25 minutes and reaches thick batter consistency.
- 2. Heat oven to 350 degrees. Melt coconut oil and use half to coat 9x6 nonstick pan (or line with parchment). Add batter to prepared baking pan, smooth top and coat with remaining coconut oil.
- 3. Bake 1 hour. Let cook completely and slice into 12 bars. Store in fridge; better eaten cold.
- 165 cal., 3.6 g fat, 28 g carbs, 2.3 g fiber, 3.3 g protein.
