Indian Cauliflower
- 1 lb cauliflower, cut into florets
- 2 cloves garlic, chopped
- 5 green onions, chopped
- 3 Tbsp olive oil
- 1 tsp mustard seeds
- 1 tsp salt
- 1/2 tsp ground turmeric
- 1 tsp ground almonds
- 1. heat 2 Tbsp oil in a skillet or wok over medium-high heat, add cauliflower and cook, stirring constantly 1-2 minutes (cauliflower will absorb the oil)
- 2. Add 1/2 cup water, cover and cook 3-4 minutes, drain water and set cauliflower aside (do not overcook)
- 3. heat remaining 1 Tbsp oil in the skillet/wok, add mustard seeds. (they will start popping, so watch out)
- 4. Add garlic, salt and turmeric, stir, cover and cook for 2 minutes
- 5. Add onions, almonds, and cauliflower and cook 3 minutes stirring constantly
- serve immediately
