Bernaie'S Harissa Couscous
- 312 ml of V8 juice (2 small cans)
- 1 Tbsp Harissa paste
- 1 cup whole wheat couscous
- 6 to 8 cherry tomatoes, cut in 4ths
- 1/2 tsp salt
- 2 Tbsp butter
- Cut tomatoes into quarters and sprinkle the 1/2 tsp of salt over them. Set aside.
- Mix harissa paste with the V8 juice and bring to a boil.
- Add the couscous and tomatoes, stir and cover, and remove from heat. Let stand for 5 minutes.
- Be sure to do this at the end of your meal preparation, when everything else in your meal is almost ready, as this takes no time whatsoever.
- When you are about to plate this, you might think the finished product is one, big lump... but after you stir in the butter, you'll find it's a beautiful, fluffy grain.
- Also, start with just one Tablespoon of Harissa paste, then add more the next time if you desire more heat.
