Duck Gumbo
- 2 ducks, well-cooked and boned (I use more ducks, but 2 will do)
- 1 1/2 sticks oleo
- 1 c. flour
- 2 qt. duck broth
- 4 medium-sized onions, chopped fine
- 1 small bunch celery, chopped fine
- 1 large or 3 small bell peppers, chopped
- 3 cloves garlic
- 1 bunch green onions (tops included), chopped
- 1 (5 oz.) can tomato paste
- 2 (No. 2) cans tomatoes
- 2 tsp. Accent
- 2 Tbsp. dry parsley
- 1 tsp. oregano
- 1 tsp. thyme
- 2 Tbsp. salt
- 1 Tbsp. black pepper
- 2 Tbsp. gumbo file
- 1/2 to 1 tsp. red pepper (depending on taste)
- Mix all together in a large pot and simmer approximately 2 hours, stirring often.
- Serve over rice.
