Crawfish Pasta
- 1 pound crawfish meat
- 4 tablespoons butter
- 1 cup onions diced
- 2 garlic cloves minced
- 1 teaspoon salt or season to taste
- 1/2 tablespoon cayenne pepper
- 1/2 tablespoon coarse black pepper
- 1 tablespoon paprika
- 1/2 tablespoon chile powder
- 2 tablespoons blonde roux (for thickening)
- 8 oz heavy whipping cream
- 2 cups mozzarella cheese
- Melt butter in the skillet over a medium high heat
- Add onions and garlic and saute until onions are translucent.
- Add cayenne pepper, black pepper, paprika, salt, and chili powder and stir.
- Add crawfish tails and saute for about 8 minutes or until cooked.
- Add heavy cream and stir
- When the cream begins to boil, lower the heat and add the blonde roux.
- Simmer for another 10 minutes
- Turn off the stove and stir in the cheese until it is melted into the sauce
- Serve over pasta with bread
