Gluten Free Pierogies
- dough:
- 1/2 chestnut flour or acorn flour
- 1 cup buckwheat flour
- 1/2 oatflour
- 1 large egg
- tsp birch gum/ xylitol (xanthan gum only if you can't gather or find it)
- 2 tbsp farmers cheese
- 1 tbsp milk
- sea salt
- 1/2 cup water
- filling options : bison w onion w purple cabbage or kolhrabi greens or turnip greens, mashed kolhlrabi w farmers cheese, mashed turnip farmers cheese w onion, hog bacon can be added, polish berries w farmers cheese w honey or birch syrup or birch sugar.
- wild mushrooms (morrels ect) w mashed turnips w onion.
- blend all ingredients for dough except warm water then add water. add which ever your prefered filling combination.
- ingredients and ingredient sugestions are all native to eastern europe & poland.
- the only native sweeteners their are honey, birch syrup, or birch sugar. the last of the european bison reside in poland. the bison i sugest is the farm raised american found in the stores.
