Won Ton Mushroom Ravioli With Mushroom Sauce
- 1/2 lb. mushrooms
- 8 large green or black olives
- 1 Tbsp. butter
- 2 Tbsp. virgin olive oil
- 2 Tbsp. finely chopped onion
- 1/4 tsp. oregano
- 1 Tbsp. finely chopped parsley
- salt
- 1 large garlic clove, minced
- fresh ground pepper
- 32 won ton skins
- freshly grated Parmesan cheese
- mushroom sauce (follows)
- Food process mushrooms coarse rather than fine.
- Pit olives and process finer than mushrooms.
- Heat butter and oil in skillet.
- Add onion, oregano, parsley and mushrooms.
- Salt lightly and cook over brisk heat, stirring constantly 5 to 6 minutes.
- Mushrooms should start to color and onion softens.
- Add garlic during the last few minutes of cooking so it doesn't burn pepper.
- Set aside.
