Greek Yogurt Pancakes
- 1 cup All Purpose Flour
- 1 teaspoon Baking Powder
- 1 tablespoon Sugar (can adjust to taste)
- 1/2 teaspoon Salt
- 1/2 cup Greek Yogurt (Traditional Style)
- 1/2 cup Low Fat Milk (Whole can be used)
- 1 Egg
- 1/8 cup Vegetable Oil
- 1/2 teaspoon Vanilla Extract (optional, to taste)
- In medium sized bowl, sift then mix together; flour, baking powder, sugar, salt.
- In small bowl, whisk egg.
- Add to egg; oil, yogurt, milk and vanilla, then whisk only until combined.
- Add the wet mixture to the dry mixture. Mix only until combined.
- Preheat large nonstick pan over medium high heat.
- Spread ~ 2 tsp vegetable oil throughout pan.
- Pour large spoonfuls onto pan. Turn heat to Medium. (3 large pancakes in each batch)
- Wait until pancakes bubble to check bottoms. Flip once golden brown.
- Cook until each pancake is golden brown on each side and fluffy!
- Serve with pats of butter on each pancake and top with your favorite syrup or honey.
- Enjoy!
