Toffee Heaven Cookies
- 1 cup sugar, plus 1/2 cup for rolling
- 1 1/2 sticks salted butter, at room temperature
- 1 large egg
- 1 teaspoon vanilla
- 2 cups flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 3/4 cup chopped bars of chocolate-covered toffee (like "Heath Bars")
- Heat oven to 350 degrees. Combine 1 cup sugar, butter, egg and vanilla in a mixing bowl. Beat 1 minute at medium speed of an electric mixer until creamy, scraping side of bowl often. Add flour, baking powder and baking soda. Mix on low speed 2 minutes. Stir in chopped toffee bar by hand. Shape dough into 1-inch balls. Place about 1/2 cup sugar on a plate. Roll balls in sugar.
- Place 2 inches apart on ungreased baking sheets. Flatten each ball with the bottom of a glass (if it sticks, dip glass in sugar). Bake 15 to 20 minutes or until edges are lightly browned. Do not overbake. Cool completely.
