Peach Cobbler
- Fruit Filling:
- 1.5 pounds frozen peaches
- 1/4 cup brown sugar
- 1 tablespoon fresh lemon juice
- 2 tbsp cornstarch
- Biscuit Topping
- 1.5 cup all-purpose flour
- 3/4 cup sugar
- 1.5 teaspoon baking powder
- 3/4 teaspoon salt
- 1 stick cold unsalted butter, cut into small pieces
- 1/4 cup hot water
- 1. Preheat oven to 425 deg F.
- 2. Combine fruit filling ingredients in a casserole dish.
- 3. Bake fruit filling for 15 minutes. Remove from oven and stir. Bake for another 15 minutes.
- 4. Meanwhile, combine all the dry biscuit topping ingredients in a food processor and pulse to mix it.
- 5. Add the butter. Pulse until it forms coarse crumbs.
- 6. Heat 1/4 cup water in microwave and add to the food processor. Pulse until just combined.
- 7. Remove fruit filling from oven. Put small spoonfuls of biscuit topping over the fruit. Do not spread it - the topping will spread as it bakes.
- 8. Bake for 25 minutes or until the topping is golden brown and cooked through.
- 9. Let the cobbler sit for a few minutes before serving, or serve at room temp.
