Spaghetti Squash With Spinach Sauce

  1. Bake and scoop out squash
  2. Fluff slightly
  3. Prepare the sauce by frying 4 tbsp. of the butter over medium high heat and add spinach and saute with garlic, nutmeg and salt; just until spinach is wilted, about 5 minutes. Remove from the frying pan to food processor and puree; pour over squash.
  4. Saute onions in remaining butter until soft. Add mushrooms to the pan and saute just until their juices begin to run. Spoon over the spinach.
  5. Sprinkle sesame seeds on top and serve.
