Spaghetti Squash With Spinach Sauce
- 1 spaghetti squash
- 6 tbsp. butter
- 1 10 ounce bag spinach, well cleaned and trimmed
- 2 cloves of garlic, crushed
- 1 tsp grd. nutmeg
- 1 cup medium sized onion, chopped
- 1 cup sliced mushrooms
- 2 tbsp. sesame seeds, toasted
- Bake and scoop out squash
- Fluff slightly
- Prepare the sauce by frying 4 tbsp. of the butter over medium high heat and add spinach and saute with garlic, nutmeg and salt; just until spinach is wilted, about 5 minutes. Remove from the frying pan to food processor and puree; pour over squash.
- Saute onions in remaining butter until soft. Add mushrooms to the pan and saute just until their juices begin to run. Spoon over the spinach.
- Sprinkle sesame seeds on top and serve.
