Grilled Asparagus
- 1 lb. asparagus (thick or thin, depending on preference)
- 6 large shallots
- 1 to 2 T oil or cooking spray
- 2 T balsamic vinegar
- Preheat gas grill to medium high.
- Rinse asparagus. Cut off the woody bottoms of the asparagus spears. Then, using a vegetable peeler, peel the remaining bottom inch or so of each spear.
- Peel and cut shallots in halves or quarters.
- Coat asparagus and shallots lightly with oil or cooking spray. Place in grill basket in one layer.
- Reduce grill heat to medium. Grill in basket with gas grill lid closed over medium heat for 10-15 minutes (to desired doneness), stirring 2 or three times, until asparagus spears are slightly blistered and and shallots are soft and light brown.
- Remove from grill to serving platter. Drizzle with balsamic vinegar.
- Serve hot, warm, or at room temperature.
