Grilled Asparagus

  1. Preheat gas grill to medium high.
  2. Rinse asparagus. Cut off the woody bottoms of the asparagus spears. Then, using a vegetable peeler, peel the remaining bottom inch or so of each spear.
  3. Peel and cut shallots in halves or quarters.
  4. Coat asparagus and shallots lightly with oil or cooking spray. Place in grill basket in one layer.
  5. Reduce grill heat to medium. Grill in basket with gas grill lid closed over medium heat for 10-15 minutes (to desired doneness), stirring 2 or three times, until asparagus spears are slightly blistered and and shallots are soft and light brown.
  6. Remove from grill to serving platter. Drizzle with balsamic vinegar.
  7. Serve hot, warm, or at room temperature.
