Spinach, Crispy Prosciutto, Egg Socca Pizza

  1. 1. Heat a splash of olive oil over medium heat in a large nonstick skillet. Add chopped Prosciutto and saute for 30 seconds. Add garlic to pan and saute for an additional 30 seconds. Add spinach to the pan, season lightly with salt and pepper, and saute until spinach is wilted. Divide spinach / Prosciutto mixture evenly between the 4 socca flatbreads. Put the divided Parmesan on top and set aside. 2. Wipe out skillet, add more olive oil, and heat over medium high heat. Fry 4 eggs to your desired style and place one on top of each pizza. 3. Place pizzas on a cookie sheet and broil for 1-2 minutes, watching carefully, until Parmesan is melted.
