Mama Love'S Pasta With Zucchini And Red Onion
- 3 Large Green Zucchini, washed thoroughly and thinly sliced horizontally
- 1 Mediumn Red Onion thinly sliced
- 1/4 cup Extra Virgin Olive Oil
- Black Pepper to taste
- 1 Lb/ Uncooked Bowtie Pasta, or Rigatoni, or Ziti (or your favorite shape-not spaghetti,liguini, etc.)
- 4 Tbsp Unsalted Butter
- Salt to taste
- 1/4 Cup Heavy Cream
- 1/2 Cup grated Parmigiano Reggiano
- Mix zucchini, onions, oil and black pepper in a bowl, cover and let marinate for 2 hours. Prepare pasta according to package directions for al dente. While pasta is cooking, melt 1 Tbsp. of butter in a saute pan, preferably non-stick, and add zucchini mixture. Add remmaining butter, stirring until the butter melts completely.At this point the pasta should be ready. Scoop the pasta out of the water, shaking off the excess, and add to the zucchini. Let cook until excess water evaporates. Add cream a little bit at a time, so that pasta is creamy, but not too wet(you may not use all of it. Stir in cheese, season with additional black pepper if desired, and serve with addtional grated cheese on the side.
