Buckin' Homemade Ketchup
- 20 lbs. ripe tomatoes, quartered
- 6 onions, chopped
- 1 jar roasted red peppers (or 4 fresh red peppers, chopped)
- 2 garlic cloves, chopped
- 1 tablespoon Fruit Fresh
- juice of two lemons
- 1/4 cup Worchestershire sauce
- 2 tablespoons hot horseradish
- 1 1/2 cups brown sugar
- 6 inch stick of cinnamon
- 1 teaspoon black pepper
- 1 teaspoon cloves
- 1 teaspoon allspice
- 1 1/4 teaspoons celery salt
- 2 cups rice vinegar
- 2 tablespoons salt, scant
- 4 teaspoons Hungarian sweet paprika
- 1/2 teaspoon cayenne pepper
- 1/4 teaspoon turmeric
- Combine tomatoes, onion, peppers, and garlic in a large, heavy-bottom pot. Cover and bring to a boil over medium heat, stirring occasionally. Reduce heat and simmer until tomatoes are completely collapsed. Cool mixture, then run through a food mill. Return puree to the heavy-bottom pot, and bring to a simmer over medium-low heat, stirring often. Reduce heat to maintain a gentle simmer, and cook until puree is reduced by half, stirring often.
- Add the rest of the ingredients, and continue to cook until mixture is very thick, stirring often. Taste and adjust seasonings if desired. Remove cinnamon stick. Pour into hot, sterilized jars and process for 15-20 minutes.
