Buckin' Homemade Ketchup

  1. Combine tomatoes, onion, peppers, and garlic in a large, heavy-bottom pot. Cover and bring to a boil over medium heat, stirring occasionally. Reduce heat and simmer until tomatoes are completely collapsed. Cool mixture, then run through a food mill. Return puree to the heavy-bottom pot, and bring to a simmer over medium-low heat, stirring often. Reduce heat to maintain a gentle simmer, and cook until puree is reduced by half, stirring often.
  2. Add the rest of the ingredients, and continue to cook until mixture is very thick, stirring often. Taste and adjust seasonings if desired. Remove cinnamon stick. Pour into hot, sterilized jars and process for 15-20 minutes.
