Enchilada Pie
- 1 lb ground beef (or turkey)
- 1 onion, chopped
- 2 cups grated sharp cheddar cheese
- 1 clove garlic, minced
- 2 tbsp red chili pepper
- 1 eight oz can tomato sauce
- 1 four oz can chopped black olives
- 1 dozen corn tortillas
- 1/4 stick butter or margarine
- Salt and pepper to taste
- Saute onion and garlic in butter, then add meat, tomato sauce, olives and chili pepper and simmer. When meat is cooked through, layer an 8 x 11 casserole dish as follows:
- Butter one side of the corn tortilla and place buttered side down on casserole dish. Cover the bottom of the dish with tortillas, and half of the meat mixture and smooth over tortillas until layered evenly. Sprinkle cheddar cheese on top of meat mixture. Begin with corn tortilla layer again and alternate layers until you reach the top. Put a layer of corn tortillas on top and sprinkle with cheese. (Alternately, you can also sprinkle on cut green onions and sliced olives) Pour about a half a cup of water over the top of the layered pie and cover. Bake in a 350 degree oven for 30 minutes.
