Spicy Lentil Soup
- 1 tablespoon olive oil
- 1/2 medium white onion, diced small
- 1 carrot, peeled and diced small
- 1 celery stalk diced small
- 1 tbsp roasted garlic puree
- 1tsp ground cumin
- 1 roma tomato diced
- 2/3 cup green lentils dry
- 5 cups vegetable broth
- 2 tbsp chipotle puree
- 1/2 lime
- Salt and freshly ground black pepper to taste
- Heat the olive oil in a pot over medium heat. Add
- the onion, carrots, and celery, let sweat until translucent. Add the roasted garlic and cumin. Add the tomatoes and chipotle. Add the lentils and the vegetable broth. Bring to a boil then reduce and let simmer until the lentils are tender, about 25 minutes. Squeeze the juice from the lime over the lentils, and season to taste with the salt and pepper.
