Sanjay'S Mango & Cranberry Relish

  1. In a heavy, 3qt saucepan with lid, melt the sweet butter over medium heat.
  2. Stir in the brown sugar; blend thoroughly.
  3. Add the cranberries, blend thoroughly.
  4. Stir in the diced mangoes.
  5. Stir in the diced apples.
  6. Continue stirring often, so that the relish does not boil over.
  7. Stir in the cloves and cinnamon.
  8. Cover, and continue to cook, stirring often, for about 2 hours.
  9. Taste for seasoning, and adjust as desired.
  10. Remove from heat, and allow to cool.
  11. Using a potato-masher, mash the fruit until soft.
  12. Transfer to a pretty glass bowl, and serve with a lovely antique spoon.
  13. The mangoes and apples should be somewhat under-ripe.
  14. You can add a splash of cherry brandy to the relish if you like a stronger flavour.
  15. This is delicious with roast turkey, or pork.
  16. You can also serve this with some Greek-style, whole milk yoghurt.
