Sanjay'S Mango & Cranberry Relish
- 3/4 stick sweet butter
- 1 cup golden brown sugar, packed firmly
- 1-1/2 lb very ripe cranberries
- 2 small, very firm mangoes, peeled & diced
- 2 small, very firm Red Delicious apples, peeled & diced
- Cloves
- 2 tbsp cinnamon
- In a heavy, 3qt saucepan with lid, melt the sweet butter over medium heat.
- Stir in the brown sugar; blend thoroughly.
- Add the cranberries, blend thoroughly.
- Stir in the diced mangoes.
- Stir in the diced apples.
- Continue stirring often, so that the relish does not boil over.
- Stir in the cloves and cinnamon.
- Cover, and continue to cook, stirring often, for about 2 hours.
- Taste for seasoning, and adjust as desired.
- Remove from heat, and allow to cool.
- Using a potato-masher, mash the fruit until soft.
- Transfer to a pretty glass bowl, and serve with a lovely antique spoon.
- The mangoes and apples should be somewhat under-ripe.
- You can add a splash of cherry brandy to the relish if you like a stronger flavour.
- This is delicious with roast turkey, or pork.
- You can also serve this with some Greek-style, whole milk yoghurt.
