Seafood And Rice Casserole
- 4 cups mixed seafood (crab, scallops, shrimp, oysters, bass, and/or any mild firm white fish)
- 2 cups cooked white rice
- 1 cup soft bread crumbs
- 2 tbl chopped pimento(l small jar)
- 2 tbl chopped green pepper
- 2 tbl chopped green onion
- 4 oz canned mushrooms with liquid
- 2 tbl capers
- 1/2 cup mayonnaise
- 1/2 cup skim milk
- 1 10oz cream of mushroom soup
- 2 eggs, beaten
- Combine cooked rice, bread crumbs, pimento, green pepper, green onions, mushrooms with liquid, and capers in a bowl. Mix together mayonnaise, skim milk, cream of mushroom soup, beaten eggs and then add to rice mixture. Carefully fold in 4 cups of mixed seafood. Put in large greased 9" X 13" pyrex baking dish. Bake at 350 degrees for 35-45 minutes.
