Strawberry Banana Salad
- 1 - 6 oz. package strawberry gelatin
- 1 c. boiling water
- 2 - 10 oz. pkgs. frozen strawberries, partially thawed
- 1 - 20 oz. can crushed pineapple, undrained
- 1 c. mashed firm bananas (about 3 medium)
- 1/2 to 3/4 c. chipped walnuts or pecans
- 2 c. (16 oz.) sour cream
- 2 tsp. sugar
- 1/2 tsp. vanilla extract
- In a bowl, dissolve gelatin in boiling water.
- Stir in strawberries, pineapple, bananas, and nuts.
- Pour half of mixture into a 13 x 9 x 2 in. dish.
- Refrigerate for 1 hour or until set. Set the remaining gelatin mixture aside.
- Combine the sour cream, sugar, and vanilla; mix well.
- Spread over the chilled gelatin. Spoon remaining gelatin mixture over top.
- Chill overnight.
- Yield: 12 - 15 servings.
