Creminberry Pie
- Crust
- 4-5 cups Nilla Wafer cookies
- 1 stick of butter (soft)
- 1/3 cup half and half milk
- Berry Filling
- 3 eggs
- 1/2 cup sugar
- 1/2 cup flour (sifted)
- 2 tablespoons lemon zest
- 1/2 cup lemon juice
- 1/2 cup half and half milk
- 2 cups left over fruit salad (whatever you have)
- Put together the crust ingredients in a food processor and mix until fine crumbs. Then press into a pie dish.
- Whisk the eggs and sugar together. Then add the lemon zest and juice and whisk. Slowly add sifted flour to bowl while whisking so it doesn't get lumpy. Then pour in the fruit salad and fold gently.
- Preheat oven to 350u0b0 F and bake for 35 minutes. Let cool before preparing each plate.
- Individual piece presentation:
- - Two slices of pie (small)
- - A round cut piece of lemon wedged in between the two slices of pie
- - Plum sauce: heat/caramelize in a nonstick pan:
- 1 plum mashed (no skin)
- 2 tablespoons honey
- 4 tablespoons sugar
