Green And Gold Casserole
- 3/4 lb. yellow squash
- 3/4 lb. zucchini squash
- 1/2 tsp. oregano
- 1 tsp. salt
- 1/2 c. milk
- 8 oz. shredded sharp cheese
- 1 medium onion
- 2 tsp. vegetable oil
- 2 Tbsp. parsley
- 3 beaten eggs
- 20 saltine crackers
- Preheat oven to 325u0b0.
- Shred
- squash.
- Drain
- well
- any excess water.
- Chop onion and saute
- in oil.
- To the onion add oregano, parsley, salt, eggs and
- milk.
- Int
- greased casserole, spread a layer of the shredded squash.
- Top with a layer of crushed saltines and then with
- one cup of the cheese.
- Put the remainder of saltines and cheese
- over
- all
- and
- pour the mixture
- of onion, oregano,
- salt,
- parsley,
- eggs
- and
- milk. Bake, uncovered, for 40 minutes.
