Main Dish Greek Salad
- Dressing:
- 1/4 cup fresh lemon juice
- 1 Tbsp. honey
- 2 cloves grated garlic
- 2 Tbs. olive oil
- salt, pepper to taste
- Salad:
- 1 romaine lettuce thinly sliced
- 1 can Kipper Snack slightly smoked in oil sardines, crumbled
- 2/3 cup rinsed and drained chickpeas
- 2/3 cup chopped roma tomatoes
- 1/2 cup chopped cucumber
- 1/2 cup chopped yellow bell pepper
- 1/2 cup chopped red onion
- 2/3 cup crumbled feta cheese
- 1/2 cup chopped kalamata olives
- 10-12 mint leaves thinly sliced
- Dressing: Place all in blender and blend until smooth and creamy
- Salad:
- Place lettuce in bowl. Top with crumbled sardines
- Except for mint arrange all
- in pie shape wedges over salad. Sprinle mint over all.
- When ready to serve top with dressing and toss.
